Lentil Salad

Ingredients:
1. 1 Cup dry green lentils
2. 1 Cucumber
3. 1 Cup cherry tomatoes
4. 1/2 Onion
5. 1/2 Cup fresh mint

Dressing:
1. 1/3 Cup olive oil
2. 2 Limes juice
3. 2 Cloves garlic, mashed
4. Salt
5. 1 tsp black pepper

Method of creating it:
-Rinse and drain the lentils
-Add to saucepan along with 3 cups water and a pinch of salt
-Bring to a boil, then lower heat, cover and let simmer for 25 minutes.
-Once cooked, rinse with cold water to cool.
-Next, chop all your vegetables and set aside
-Assemble salad, add the dressing and enjoy
