Ingredients:
1. 1 Cup uncooked lentils
2. 1 Cup uncooked quinoa
3. 2 Cup chopped broccoli
4. 1 Onion
5. 1/2 Fresh pineapple chopped
Dressing:
1. 1/2 Cup raw cashews
2. 1/4 Cup water
3. 2 tbsp lemon juice
4. 2 Garlic cloves
5. 4 tbsp plant milk
6. Salt and pepper to taste
Method of creating it:
-Cook your lentils and quinoa
-Finely chop broccoli, onion and pineapple
-Add all the ingredients listed under dressing into a blender and blend until smooth.
-Add the dressing over the salad and enjoy
